High Vinegar

Ingredients 4 cups
  • 2 cups short-grain Japanese rice
  • 2 cups water
  • ¼ cup white wine vinegar
  • ¼ cup seasoned rice vinegar
  • 1½ tsp. salt
  • 2 Tbsp. sugar (1tbsp = 12.5g sugar)
    • 5.5 sugar packets
Ingredients 2 cups
  • 1 cups short-grain Japanese rice
  • 1 cups water
  • 1/8 cup 30ml white wine vinegar
  • 1/8 cup 30ml seasoned rice vinegar
  • 0.75 tsp. salt
  • 1 Tbsp. sugar (1tbsp = 12.5g sugar)
    • 2.75 sugar packets

Rice preparation

  1. Rinse rise running water 2 minutes.

    1. Let dry for few minutes.
  2. Rice setting 12 minutes.

    1. Release pressure 10 minutes.

Vinegar prep

  • Vinegar
  • Sugar
  • Salt

Microwave for 1 minute.
