Sushi Rice
High Vinegar
Ingredients 4 cups
- 2 cups short-grain Japanese rice
- 2 cups water
- ¼ cup white wine vinegar
- ¼ cup seasoned rice vinegar
- 1½ tsp. salt
- 2 Tbsp. sugar (1tbsp = 12.5g sugar)
- 5.5 sugar packets
Ingredients 3 cups
- 1.5 cups short-grain Japanese rice
- 1.5 cups water
- 45ml white wine vinegar
- 45ml seasoned rice vinegar
- 1.125 tsp. salt
- 1.5 Tbsp. sugar
- OR 1 tablespoon of honey
Ingredients 2 cups
- 1 cups short-grain Japanese rice
- 1 cups water
- 1/8 cup 30ml white wine vinegar
- 1/8 cup 30ml seasoned rice vinegar
- 0.75 tsp. salt
- 1 Tbsp. sugar (1tbsp = 12.5g sugar)
- 2 tsp salt
Rice preparation

Rinse rise running water 2 minutes.
- Let dry for few minutes.

Rice setting 12 minutes.
- Release pressure 10 minutes.
Vinegar prep
- Vinegar
- Sugar
- Salt
Microwave for 1 minute.
